When I was little this was my FAVORITE SALAD!! But of course I didn’t eat the onions because they were gross🙃 (Don’t worry, I’ve realized onions actually taste good👍🏽) So anyway I asked my mom how we used to make it and she said mayonnaise, vinegar and sugar…. so not something we would eat now. BUT I figured out a way to make it taste just as good and with way better ingredients!!! Now it’s back to being a summer favorite and I’m so happy❤️
Cucumber Salad (print here)
Ingredients:
½ cup tahini
½ cup apple cider
½ cup water
1 tsp. pepper
1 tsp. salt
3 medium cucumbers
1 small onion
Directions:
- In a mason jar, combine tahini, apple cider vinegar, water, pepper and salt and shake to mix
- Cut the cucumbers into slices and thinly slice the onion into rounds then slice them in halves
- Place all vegetables in a bowl and pour the dressing over them, making sure to coat everything
- Place in the fridge for about 30 minutes for the cucumbers to marinate and soak up the yummy flavor
