I love Squash and I love curry! So I put them together and it turned out SO GOOD!! And this recipe is super simple👌🏽
Curried Vegetables (print here)
Ingredients:
1 head of cauliflower
1 medium sized butternut squash
½ onion
1 cup chicken bone broth
1 tsp. curry powder
¼ tsp. paprika
1 tsp. salt
¼ tsp. pepper
Directions:
- Preheat oven to 400 degrees. Cut butternut squash in half lengthwise, then peel skin off and cut into cubes
- Place on a pan and toss with some coconut oil and curry powder then place in oven for about 30-40 minutes or until tender
- Cut cauliflower into small florets, do the same thing as you did with the butter squash and place in oven for 20-30 minutes
- In a medium sized sauce pan, add ghee or coconut oil and diced onion and cook for about 5 minutes or until translucent
- Add in bone broth and heat until warm.
- Once the butternut squash is done, add the broth and half the butter squash cubes to a blender. Add curry powder, paprika, salt and pepper to blender and blend until smooth
- Pour back into the saucepan and add the other half of the butternut cubes and add the cauliflower. Stir together and warm for about 10 minutes so that all the vegetables are totally cooked through
