Happy 4th!!

Happy Independence Day to everyone in the US🇺🇸 To make things extra special today make this super simple and delicious rhubarb bake! It’s tart which I love but feel free to add honey or coconut sugar or something like that. This is perfect to add to shortbread instead of just using strawberries or adding it to your breakfast meal! You could totally put it on top of these cookies for a perfect dessert!!👍🏽

Simple Rhubarb Bake (print here)

2 stalks rhubarb

24-30 strawberries

½ cup orange juice

¼ cup arrowroot powder (to make it thicker)

1 tsp. cinnamon

Optional honey if you want it sweet

Directions:

  1. Cut rhubarb into slices and add to a 9×12 pan
  2. Destem (is this a word??) and cut strawberries in halves, add to rhubarb
  3. Mix the orange juice and arrowroot powder and pour over fruit
  4. Sprinkle cinnamon and mix well. Make sure to coat all the fruit
  5. Place in the oven at 350 degrees for 40-45 minutes or until tender
