Very Green Casserole

“Cheesy” Broccoli & Zucchini Noodle Casserole (print here)

makes one 9×9 pan


1 small broccoli, cut into florets

2 medium carrots, chopped

1/3 cup basil, fresh

1 cup shredded chicken

1 cup chicken bone broth

1 cup water

½ tsp. salt

¼ tsp. pepper

1 tbsp. lemon juice

¼ cup nutritional yeast

1 small zucchini, spiralized

1 clove garlic

1 tbsp. ghee



  1. In a medium sized pan, add ghee and garlic. Cook for about 30 seconds
  2. Add broth and water and warm to a boil. Then add the broccoli and carrots and cook until tender
  3. Add broccoli, carrots, broth, lemon juice, basil, salt, pepper and nutritional yeast to a blender and blend until smooth
  4. Mix in the shredded chicken and zucchini noodles
  5. Preheat over to 350 degrees
  6. Pour into a 9X9 pan (8X8 would work too) and sprinkle with more nutritional yeast
  7. Bake for 20 minutes or until warm
