I LOVE making new chia pudding recipes!! The first time I made this one though I used a little too much spices😬 haha so it was a little spicy but hey mom liked it! But I remade it and I think this one tastes DELICIOUS! Perfect snack for anytime! Hope you enjoy
Carrot Cake Chia Pudding (Print here)
Ingredients:
2 carrots, steamed
1 banana
½ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. ginger
1-3 tbsp. honey
1 cup water or milk of choice (more if needed)
6 tbsp. chia seeds (or less if you want it less thick)
Directions:
- Steam the carrots slightly so they are easier to blend
- Place all ingredients in blender and blend until smooth (make sure to taste it to see if you want to add anything to it)
- Pour in a storage container. Put chia seeds in one tablespoon at a time
- Stir every minute for 5 minutes
- Place in fridge and let sit for one hour or overnight
