Since we know all the great benefits of rutabagas try out this simple way to eat it! Roasted with some lime and spice! Perfect with Mexican food!!
Roasted Rutabaga (print here)
Ingredients:
1 rutabaga
2-3 tbsp. ghee or coconut oil, melted
1 tbsp. lime juice
½ tsp. oregano
½ tsp. smoked paprika
¼ salt
Directions:
- Cut the two ends off of the rutabaga and peel the whole thing
- Slice into cubs like you would a potato and place in medium sized bowl
- In a small bowl, combine all other ingredients
- Pour over the rutabaga and toss, making sure to get the seasoning on every piece
- Throw them on a parchment lined pan and put into 400 degree oven for 30-40 minutes or until tender
- Sprinkle with more salt if needed
