WHY? Rutabaga

Tid Bit(e) Tuesday

Why eat a rutabaga? Its a root vegetable that is a cross of a cabbage and a turnip

  1. GOOD SUBSTITUTE- Can be used as a sub for potato if on the AIP or any other special dietary reason like diabetes
  2. SKIN HEALTH- In a 100 gram serving, rutabaga offers about half of the DV for Vitamin C! This is an important vitamin in collagen production (the thing that keeps our skin healthy and young)
  3. HEALTHY ENZYME FUNCTION- Zinc is a key component to enzyme function and rutabaga gives a moderate amount of it (1)
  4. ANTIOXIDANTS- Rutabagas contain something called glucosinolates which are linked to reducing the growth of cancer cells!!! (2)
