Instant Pot Beef

Happy Sunday friends! Heres and easy meal to make thanks to the wonderful Instant Pot! We’ve been using ours so much to make lots of things! This way you can still make lots of really yummy food but you don’t have to worry about starting it in the morning 🙂 We made baby pepper nachos with our meat and it was 😍

Instant Pot Shredded Beef (print here)


1 chuck roast about 3½ pounds

1 tbsp. olive oil

1 tbsp. cilantro

1 tbsp. oregano

2 tsp. cumin

1½ tsp. paprika

1 tsp. chipotle chili powder

1 tsp. tajin

1 tsp. garlic powder

1 can 7 oz. green chilies

¾ cup water


  1. Brown roast in instant pot on all sides in the olive oil, then remove
  2. Mix all seasoning ingredients together, then add the water and green chilies to that mixture
  3. Deglaze the pot with mixture, then turn off pot
  4. Place roast back in pot, cover and lock lid. Press the “Meat” button.
  5. Once done, shred the meat and use for taco bowls, nachos with potatoes or anything you like
  6. If needed, you can thicken the sauce with ¼ cup arrowroot powder mixed with ¼ cup water
