Tuna Cakes

Need a quick dinner? Try these tuna cakes! I wrapped mine up in some Swiss chard and it was delicious!! They are a little crumbly though which I like but just be aware of that😉

Tuna Cakes (print here)

Makes 8 cakes

Ingredients:

2 cans of tuna (good brand)

1 cup sweet potato, smashed

¼ cup lemon juice

¼ cup RedHot

¼ cup cilantro, fresh

½ tsp. salt

¼ tsp. pepper

2-3 tbsp. ghee or coconut oil for cooking

Directions:

  1. Mix all ingredients together in a medium sized bowl
  2. Form into 8 patties
  3. Heat a pan and add the oil
  4. Place patties in the pan and cook for 2-3 minutes on each side
