Wanna know something? Artichokes are very time consuming to make… BUT I really think you should give them a try!👍🏽 It’s fun to experience new things and to make something you’ve never made before. This is why I decided to make some artichokes!! And they were actually quite tasty and also we got all the BENEFITS! And we totally dipped the leaves in our tahini sauce😉
Artichokes (print here)
Ingredients:
2 large artichokes
2 garlic cloves, minced
4-5 tbsp. lemon juice
3-4 tbsp. nutritional yeast
2 small slices of Kerrygold butter or 2 tbsp. ghee
Salt and pepper to taste
Directions:
- Wash artichokes, making sure to gently pull back the leaves to clean inside
- Cut the stems and about a ½ inch of the very top
- If your artichoke has spikes, cut off the spikes with scissors
- Fill a large pot with water and heat until boiling
- Submerge the artichokes into the water, can place a plate on top to make sure they stay under the water. Place lid on
- Boil for 30-45 minutes or until you can pull off one of the bottom leaves
- After artichokes are done, remove and drain the excess water out
- Place a piece of tin foil on a pan, just enough for the artichokes to be on
- Place artichokes on the tin foil; add garlic, lemon juice, salt, pepper and nutritional yeast (try to get pour the ingredients into all the leaf creases). Add the butter on top and pop the pan into the oven for another 5 minutes
