Warm Kale Salad

Happy Easter! I know everyone’s probably thinking about chocolate BUT today were sharing a super yummy kale salad! New way to eat kale YAY! And this is a warm salad to switch things up a bit 🙂 Hope you enjoy!

Warm Kale Salad (print here)


Pesto Sauce adapted from the Whole30 Cookbook

1 cup fresh basil leaves

1 cup fresh parsley leaves

¾ cup olive oil

2 tbsp. lemon juice

2 tsp. salt

2 tsp. black pepper

1 tsp. grated lemon zest


Other Ingredients:

2 medium zucchinis, chopped

2 cups red cabbage, chopped

2 cups kale, sliced thin



  1. Combine pesto ingredients and pulse in food processer or blender until smooth. Set aside
  2. Preheat oven to 350 degrees
  3. Toss chopped zucchini with some of the pesto and place on baking sheet
  4. Roast for 10 minutes
  5. In a bowl, mix and massage the rest of the pesto into the cabbage and kale
  6. After the zucchini is done, toss in bowl with everything else
  7. Serve warm and enjoy
