FRIDAY! Today we’re sharing a cookie recipe. And these are a little fancier because of the FRUIT SALSA! I used blackberries but really any berry would work! And the fruit salsa just brings these cookies to a whole new level. It kinda reminds me of eating strawberry shortcake but these are gluten free, sugar free, dairy free and egg free! YAY YAY YAY!
Almond Shortbread Cookies (print here)
Makes 12 cookies
Ingredients:
2 cups almond flour
1 banana
¼ cup almond butter
1 tsp. baking soda
¼ tsp. salt
½ tsp cinnamon
1 tbsp. ghee
Directions:
- Preheat oven to 350 degrees
- In a food processor, combine almond flour, salt, cinnamon, and baking soda
- In another bowl, combine banana (mashed), almond butter and ghee
- Place wet ingredients in food processor and pulse until dough forms
- On a parchment lined cookie pan, spoon out cookie dough into small rounds
- Place in oven for 10-12 minutes
For the Fruit Salsa
Ingredients:
About 1 cup of any berries (I used blackberries)
½ tbsp. lemon juice
Directions:
- In a food processor, add berries and lemon juice
- Pulse just until fruit is cut into small chunks
You can also add honey or maple syrup to the cookies because they really aren’t the sweet but if you add the fruit salsa I honestly do not think it needany sugar
