Baba Ganoush (Eggplant Hummus!)

Happy MONDAY! Baba Ganoush recipe coming at ya! If you don’t know what baba ganoush is it is a middle eastern dip like hummus but it is made with eggplant instead of chickpeas! And this is how we make ours!! Hope you enjoy

Baba Ganoush (print here)


2 medium eggplants, roasted

1/2 cup tahini (sesame paste)

Juice of 2 lemons

1 garlic clove, minced

1 tsp lemon zest

1/2 tsp cumin

2 tbsp olive oil (plus more for topping)


  1. To roast eggplant, place whole eggplant on pan and poke a few times with a fork
  2. Roast in 400 degree oven for 30-40 minutes or until soft. Let cool and peel
  3. Cut into chunks and place in food processor with all other ingredients
  4. Place in bowl and top with olive oil and parsley
