Happy MONDAY! Baba Ganoush recipe coming at ya! If you don’t know what baba ganoush is it is a middle eastern dip like hummus but it is made with eggplant instead of chickpeas! And this is how we make ours!! Hope you enjoy
Baba Ganoush (print here)
Ingredients:
2 medium eggplants, roasted
1/2 cup tahini (sesame paste)
Juice of 2 lemons
1 garlic clove, minced
1 tsp lemon zest
1/2 tsp cumin
2 tbsp olive oil (plus more for topping)
Directions:
- To roast eggplant, place whole eggplant on pan and poke a few times with a fork
- Roast in 400 degree oven for 30-40 minutes or until soft. Let cool and peel
- Cut into chunks and place in food processor with all other ingredients
- Place in bowl and top with olive oil and parsley
