What’s jicama? It’s a Mexican root vegetable that people describe as a savory apple. It is FILLED with all the good things like fiber, vitamin c, potassium, copper and iron! Jicama is great raw too! Jicama fries are a perfect alternative to regular white potato fries 🙂 Because trying new veggies is fun!! Hope you enjoy
Jicama Fries
Ingredients:
1 large jicama
1/4 tsp salt
1/2 tbsp olive oil
1 tsp. Chili powder
1/2 tsp cayenne powder
1/4 tsp ginger
1/4 tsp chipotle chili (this spice is SPICY so adjust to taste)
1 tbsp lime juice
Directions:
- Preheat oven to 400 degrees
- Peel the jicama and slice vertically to make thick slabs. Cut the slabs into fries
- Place in bowl and add olive oil and all spices to bowl
- Toss to coat and then pour lime juice over fries
- Place on a parchment lined pan and bake in oven for 40 minutes or until tender
