Allergy FRIENDLY banana bread! Gluten-free, egg-free, and nut-free💁🏻 perfect for everyone and it tastes so delicious!! Especially with those @enjoylifefoods chocolate chunks🤤 which are totally optional but trust me, they are WORTH IT!
Banana Bread
Ingredients:
2 ripe bananas, mashed
1/3 cup coconut oil, melted
1/2 cup honey
2 tbsp ground chia seeds +6 tbsp water
1/3 cup almond milk or milk of choice
1 tsp baking soda
1 tsp vanilla or 1 vanilla bean, scraped
1/2 tsp salt
1 tsp cinnamon
1 3/4 cup regular flour or gluten free flour blend if desired
1/2 cup Enjoy Life Foods chocolate chunks, optional
Directions:
- Preheat oven to 325 degrees and grease a 9×5 inch loaf pan
- In large bowl, beat oil and honey with a whisk. Add chia mixture and stir well
- Whisk in mashed bananas and milk
- Then add baking soda, vanilla, salt and cinnamon and whisk to blend
- Lastly, add in the flour just until combined. Fold in chocolate chips if using (DO IT)
- Pour into prepared pan and sprinkle top with cinnamon
- Bake for 50-55 minutes or until toothpick comes out clean. Cool for 10 minutes, slice and enjoy
