Mexican Shredded Chicken!

Looking for a really easy dinner? This is super easy and it’s in a crockpot!!! It makes a perfect weekend dinner. You can put it on tacos, nachos, or even put it on some mixed greens👍🏽 add guac to make it even better😉

Mexican Shredded Chicken 

2 packages boneless, skinless chicken thighs (12)
1 package boneless, skinless chicken breasts (3)
1 tbsp cilantro, dried
2 tsp cumin
1 tsp chipotle chili
1 tsp tajin seasoning
1 tsp salt
2 tbsp coconut oil
2 cloves garlic, minced
1 7 oz can of green chilis
1-2 jalapeños
1/4 cup chicken stock
1/4 cup RedHot (or other hot sauce)


  1. Place all the chicken in crockpot
  2. Mix together cilantro, cumin, tajin seasoning, chipotle chili and salt, set aside
  3. Melt coconut oil in a pan and add garlic. Sauté briefly (don’t brown)
  4. Add green chilis, jalapeños, chicken stock, hot sauce, and spice mixture
  5. Pour over chicken and cook on low for 4-6 hours or until chicken is tender
  6. Shred and serve
