There is no such thing as too many roasted vegetable recipes, right?! Roasting vegetables just makes them taste so good and changing up the seasoning a bit can make all the difference! In this recipe we used nutritional yeast as the base of the seasoning because I LOVE the taste of it!! It can be a cheese substitute in many recipes also. Hope you enjoy😁
Tasty Zucchini
Ingredients:
½ cup nutritional yeast
½ tsp. curry
1 tsp. salt
½ tsp. pepper
Parsley flakes
5 medium zucchini
2 tbsp. coconut oil
Directions:
- Cut zucchini into slices and place in bowl
- Mix the first 5 ingredients together
- Pour coconut oil over zucchini and toss
- Sprinkle the seasoning over zucchini and toss, making sure that everything is coated
- Place on baking sheet in a single layer
- Bake at 350 degrees for 20-25 minutes
*You might have some seasoning leftover, depends on how much zucchini you use. We put the extra on the soup we had for dinner and it was delicious!!
