Roasting vegetables is really easy and makes them taste sooo AMAZING! Now, remember those amazing spices we talked about in our last post? In this recipe were using turmeric and we even added in black pepper to help our bodies absorb all that goodness.
*Also we used the carrot tops to make pesto! No wasting here
Roasted Turmeric Carrots
2 tbsp olive oil
1 tsp turmeric
¼ tsp ground black pepper
Sprinkle of salt and parsley flakes
- Preheat oven to 400 degrees
- Toss the carrots in the oil, turmeric and ground pepper.
- Sprinkle with salt and dried parsley flakes
- Roast for 20-30 minutes or until tender
